Presto Pesto

Pesto is one of those foods I told myself “it wasn’t worth making at home.” It was just so easy to buy the little jar and it lasts forever (or rather; used once and never to be seen again until it’s eventually recovered from the recesses of the fridge during a clean out). Rinse and repeat.  Who knew it was so quick, delicious and healthy to make your own?  Well, lots of people, I suppose.  But now you do too! I’m sharing my new found wisdom with you.

Makes: 5 servings

Serving Size: 1 Tbsp

What You’ll Need:

  • 1 ¼ cup fresh basil leaves
  • 1 clove garlic
  • 2 Tbsp extra virgin olive oil
  • 3 Tbsp pine nuts
  • ¼ cup grated Parmesan Cheese

Directions:

Combine ingredients in a food processor until uniform.

Basil Pesto Recipe

I enjoyed 1 tbsp with spaghetti squash, sundried tomatoes and blackened chicken.  Delish!
