WHOLE FOOD ICE POPS

Cool, refreshing, nutritious and delicious.  The citrus provides a tart tone, berries add a sugary sweetness and the basil doles out a pinch of piquant.  Flavor combinations are endless and I was inspired by my most recent trip to the Farmer’s Market for the Basil-Berry, and Citrus-Berry pairings.

Strawberries in bowl, lemons, raspberries

Makes: 4 Popsicles

What You’ll Need:

  • Juice of 2 lemons
  • Juice of 1 lime
  • ½ cup strawberries, sliced
  • ½ cup raspberries
  • 3 basil leaves

Directions:

Mash the raspberries and strawberries in separate bowls.  I used a mortar and pestle for the raspberries but a fork will do the trick also.  I found using a fork to mash the strawberries yields better results than the mortar and pestle.  Watch out, they’re a little slippery.  Squeeze lemons and lime juice and set aside in separate bowls.  Dice basil leaves into small pieces.  I made 2- “Strawberry Basil” pops and 2 “Citrus Berry” pops.

Berry Basil Pops:

  • Half lemon juice
  • Lime juice
  • Half Strawberries
  • Basil leaves

Citrus Berry Pops:

  • Half lemon juice
  • Half Strawberries
  • Raspberries

Combine in separate bowls, pour into Popsicle molds, add Popsicle sticks and freeze for about 6 hours.
