Chocolate Peppermint Crinkles and Favourite Christmas Songs

The Christmas Countdown is on guys.  I’m flying to my hometown to spend Christmas with my family this morning.  G and the pups are unfortunately staying here (G’s work travel schedule is crazy).  Even though I spent all day yesterday running around, scheduling my day down to the last minute, I knew I wanted to leave him with some treats to enjoy while I’m gone.  Something Christmasy, chocolatey….and quick to make.  It was my first time trying this recipe for Chocolate Peppermint Crinkle Cookies found here by Jessica Seinfeld.  I followed the recipe exactly and they were SO easy and turned out pretty perfectly.  I can honestly say this is the first time I actually ended up with the exact number of cookies the recipe calls for.  This never happens to me.

They are light, airy, chewy and decadent.  My only comment is if you like a strong chocolate & peppermint flavor, add a touch more peppermint extract than the recipe calls for.  The peppermint flavor is pretty subtle.  So if you’re looking for some last minute cookie recipe inspiration, look no further.

The best part about baking (aside from licking the spoon before tossing in the sink, of course.  I’m not a monster) is cranking the holiday tunes and dancing around the kitchen.  My music taste is hard to describe because I like a little of most every genre and my taste in Christmas music is no exception.  I’m a slave to tradition so my Christmas Playlist consists of songs that take me back to Christmases past.  Most of these will probably already be on your list too, if not, I hope they will be now.
