Chocolate Cinnamon Overnight Oats

This is possibly my favourite overnight oats combo.  Okay, no, it’s definitely my favourite.  I guess you could say I think they’re….t(oat)ally awesome….yeah I went there. Plus it’s packed with so many good ingredients like chia, cinnamon, cacao and almond milk….really every ingredient is just good for you.  The chia helps keep me full all morning, and they’re so easy to snag on my way out the door so I have zero excuses to grab breakfast on my way to work.

Ingredients:

½ cup oats (I use quick oats)
½ cup almond milk
1 tbsp cacao powder
1 tsp ground cinnamon
1 tbsp dried chia seeds
½ banana (mashed)
½ – ¾ cup water (don’t be worried about it being super watery at first, the chia needs plenty of liquid to absorb properly). Also pro tip: mix everything but the water first. Then add water. Trust me, it just mixes more easily. No clue why.

Mix everything well in a container and let chill overnight in the fridge. Makes 1 serving for 8sp.

I like to make several separate servings at a time so it’s easy to grab on my way out the door in the morning.  I just timed myself making 4 of these…12 minutes! Don’t worry about these sitting around for a few days, they just get better with time.  These would be super yummy warmed up as well.  Feel free to use a whole banana, I just prefer the cinnamon and chocolate flavours to be most prominent, and they make this recipe plenty sweet as is.
